The Beet Goes On
I love beets. They’re the beet-all and the end-all of vegetables, in my opinion. I could eat them every day and never get sick of them. In fact, if I ate beets every day, I’d probably never get sick! Beets are a super-good-for-you vegetable, full of powerful nutrients that help fight heart disease and certain cancers, especially colon cancer. But forget all the health mumbo-jumbo… I just love the way beets taste! They taste fattening and buttery to me.
I probably love beets because I started eating them when I was quite young. My very Polish mom prepared fried beets (Yum! Cooked in bacon fat, if I remember correctly!), pickled her home-grown beets and, of course, whipped up batch after batch of her famous borscht soup.
Unfortunately, cooking beets from scratch like Alfreda did can be such a pain (and who wants purple-stained fingernails?). So, you can imagine how thrilled I was to find Aylmer Whole Rosebud Beets on the grocery store shelves (canned vegetable aisle/$1.69). They’re the “cherry tomato” version of beets, small and really adorable-looking. (Looks are important, because we eat with our eyes first!) They’re fully cooked, packed in water, and contain just a pinch of salt. All you do is heat them. I added a smidgeon of maple syrup and balsamic vinegar (about ? 1/2 tsp each, that’s all) after heating and then sprinkled them with freshly ground black pepper. Easy, tasty, good for you! Just last night I polished off the whole can and didn’t even consume 100 calories. Gotta like that. Plus, not a purple fingernail to be found! (Thank goodness, since I just had my nails done.)

I love beets too. What a great tip. I usually only eat the pickled kind
and now I have another option. I’d love to see other easy tips for vegetables. Sometimes veggies can be so boring. Keep up the great

Oh wow, another great idea for beets!!! I love eating them too, but don’t especially like going to work with purple hands after preparing them! I say the $1.69 for a can of these yummy treats is $1.69 very well spent!
